Aloo Gobi - Potato and Cauliflower Curry

A simple, dry curry with potatoes and cauliflower cooked with spices.

Ingredients:

  • Cauliflower – 1 medium, cut into florets

  • Potatoes – 2 medium, cubed

  • Oil – 3 tbsp

  • Cumin seeds – 1 tsp

  • Onion – 1 medium, chopped

  • Tomato – 1 medium, chopped

  • Ginger-garlic powder/paste – 1/4 tsp/1 tsp

  • Turmeric powder – ½ tsp

  • Red chili powder – 1 tsp

  • Coriander powder – 1 tsp

  • Garam masala – ½ tsp

  • Salt – to taste

  • Fresh coriander – for ga ish

Method:

  1. Heat oil, add cumin seeds till they splutter. Add onion and sauté until golden.

  2. Add ginger-garlic powder/paste, then tomatoes; cook until soft.

  3. Add turmeric, chili powder, coriander powder, and salt. Mix.

  4. Add potatoes and cauliflower; mix well and cover. Cook on medium flame till veggies are tender (~15-20 mins). Stir occasionally.

  5. Sprinkle garam masala, cook for 2 more minutes. Ga ish with fresh coriander.
